Roasted Red Pepper Hummus

Roasted red peppers are conveniently available precut in jars, but choose those packed in water over oil. Garbanzo beans (chickpeas) are full of fiber and contain molybdenum, which assists the body's detoxification process.
  • 2 cans (16 ounces each) chickpeas, reserve 1/4 cup liquid
  • 1 cup roasted red peppers
  • Juice of 1/2 lemon
  • 1 1/2 tablespoons tahini
  • 2 cloves garlic, crushed
  • 1/2 teaspoon sea salt
  • 2 tablespoons extra-virgin olive oil

In a blender or food processor, combine all ingredients except 1/4 cup liquid. Pulse until smooth and blended, adding liquid through the feed tube until the ingredients reach the desired consistency.

Serve with your favorite raw veggies.
