Herbed Zucchini

Steaming is the optimal method for cooking vegetables. You maintain crisp texture while preserving nutrient content. Oregano has the highest antioxidant content of any herb—a tablespoon of fresh oregano has the same antioxidant activity as an entire apple!

  • 2 medium zucchini, sliced into 1/2" pieces
  • 1 tablespoon chopped fresh oregano
  • 2 teaspoons extra-virgin olive oil
  • 1/2 teaspoon garlic powder
  • Freshly ground black pepper
  • Pinch of sea salt

Bring 1 to 2" of water to boil in a pan with a tight-fitting lid. Arrange the zucchini in a steamer basket and place over the boiling water. Cover and steam for 3 to 5 minutes until tender. (Do not overcook.)

Meanwhile, in a large bowl, combine the oregano, oil, garlic powder, pepper to taste, and salt. Transfer the zucchini to the bowl and toss to coat.
