Who says dessert has to be a sin? Try these fresh and healthy sweet treats instead.

 

Whipped Strawberry-Banana Mousse

Ditch the heavy ice cream for this light and delectable fruit mousse.

 Ingredients
  • 1 banana, sliced
  • 8 ounces fresh strawberries
  • 4 ice cubes, crushed
  • 4 tablespoons nonfat milk powder
  • 2 teaspoons cocoa (optional)
Combine the banana, strawberries, ice, milk powder, and cocoa (if desired) in food processor or blender pitcher and blend for a few minutes until smooth. Serve immediately.
Variation: You can experiment with other fruits. If you do not use a high-water-content fruit (such as strawberries), then you will need to add some liquid (such as water, fruit juice, or your preferred milk).

This calorie-dense vegan shake is intensely satisfying. 

Ingredients
  • 2 scoops Ray & Terry’s™ Supreme Chocolate Nutritional Shake Mix
  • 1/2 avocado
  • 1/8 cup walnuts
  • 1 cup cold water (or preferred milk)
In blender, combine water, avocado, and walnuts and start blending. During mixing, add shake mix. As all the ingredients blend together, you may need to add more water—this shake can get thick. Serve immediately and enjoy the mellow chocolate flavor.

Cool Melon Salad (Vegan)

This fresh salad is perfect for outdoor gatherings.

Ingredients
  • 1/4 medium honeydew melon, cut into chunks
  • 1/4 medium cantaloupe, cut into chunks
  • 1 cup watermelon, cut into chunks
  • Juice of 1 lime
  • 1/4 teaspoon lime zest
  • Spearmint leaves
Combine honeydew and cantaloupe with watermelon in a bowl. Drizzle with lime juice and zest and toss to coat. Garnish with spearmint leaves.
Notes: Melons and berries are low glycemic index fruit options and good sources of vitamins and fiber. The citrus juice keeps the fruit crisp and fresh. We like to garnish this cool and refreshing dessert with soy yogurt and lightly frozen berries for special occasions.

Frozen Fruit (Vegan)

This creamy dairy-free soft dessert is similar to a sherbet.

Ingredients
  • 1 large banana, peeled and sliced
  • 1 cup pineapple, sliced
  • 3/4 cup raspberries
  • 1/2 bunch fresh spearmint 
Separate the banana pieces and raspberries on a tray lined with parchment paper and freeze for at least 6 hours. Blend the frozen banana pieces, frozen raspberries, mint leaves, and cold (not frozen) pineapple pieces in a food processor until smooth.
Garnish with frozen grapes or pineapple and serve immediately.
Variation: Try 1/2 cup fruit juice (such as pomegranate juice) instead of the pineapple pieces.
