Chicken in a Pot

Slow cookers are a convenient way to prepare one-pot meals without extra fat or fuss. This dish features turmeric, an exceptionally healthy curry spice being studied for its anti-inflammatory and and anticancer properties.

  • 1 pint Brussels sprouts
  • 3 pounds boneless, skinless chicken breasts, cubed
  • 16 baby carrots or 4 large carrots, sliced
  • 1 cup cubed turnips or rutabaga
  • 1 cup cubed parsnips
  • 1 cup sliced leeks (white part only)
  • 12 small white onions, peeled
  • 1/2 teaspoon dried thyme or 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon turmeric
  • 2 whole cloves
  • 2 cups reduced-fat chicken broth or water
  • 1/2 cup white wine
  • 2 tablespoons Worcestershire sauce

In a slow cooker, combine all ingredients except the Worcestershire sauce. Cook for 4 hours on high or 8 hours on low.

Add Worcestershire sauce and serve.
